My family made maple syrup for several years from the trees in and around our back yard. We boiled the sap outside in one of my mom’s roasting pans, on the gas grill. The flavor was never the same each year. One year it was smokier, another year it was incredibly light and delicate. Those looking for a milder maple flavor can stick to the lighter grades, while those who want a stronger flavor can choose the darker grades or even my personal favorite: grade B dark.
There is more to it than taste! Maple syrup (and maple sugar) also contain minerals and nutrients that other sweeteners do not have. It’s the healthiest sugar substitute with antioxidants, manganese, riboflavin, zinc, magnesium, calcium, and potassium. Maple syrup contains phenolic compounds which are usually found in things like tea, red wines and blueberries. As far as sugars go, it is a healthier option perfect for anyone living a more natural lifestyle.

How to Use Maple Syrup and Sugar In Place Of Sugar in Recipes
To substitute maple sugar for sugar:
If you are using maple sugar it’s so easy to replace regular sugar in any recipe. All you need to do is add the same amount of sugar as your recipe calls for! That’s it! Super easy.
To substitute maple syrup for sugar:
Maple syrup is a little trickier. Since it is a liquid you will need to account for the extra liquid in your recipe. For some recipes, like glazes, sauces and dressings this probably won’t matter; BUT if you are using it in baked goods it can really throw off your recipe if your ratios are off. Use 3/4 cup of maple syrup for each cup of sugar needed. Then reduce the amount of liquids added to the recipe by 3 tablespoons to account for the additional liquid in the syrup.
